Tofu Salad Sandwich

Ingredients:

4 slices whole grain bread
1 tbsp mayonnaise
2 lettuce leaves
1 tsp butter, softened
2 slices cheddar cheese
2 oz tofu, mashed with a fork
1 tbsp ground mustard
1 tbsp grated Parmesan cheese, or Romano cheese

Cooking Directions:

Combine first 5 ingredients in a bowl. Spread on half the bread slices. Top with tofu salad mixture, cheese, lettuce, and remaining bread halves. Option: For a hot sandwich, combine first 5 ingredients and microwave on High for one minute before spreading.
